It has to do with their signature haircuts, the "high and tights" which are shaved close to the head on the sides, and with a flattop. Hence, their heads look like jars.

Actually, it cam efrom a combination of th ehigh and tight coupled with their covers (not hats) being so tight on their heads they looked like they were screwed on...hence, Jarhead.
