Subject: Americans in the Israeli Air Force?

Just curious, can an American who becomes an Israeli Citizen join the IAF?

I suppose so. There are several Americans who have served on the ground in the IDF.

Israeli citizens can, and in some cases must, serve in the IDF. If you are an Israeli citizen, it doesn't matter if previously you were a citizen of the USA or Mars. However, in some cases your security clearance might be compromised.
I know there was one case of an ex USAF F-4 pilot who served as a pilot in the IAF, but that was the '70s , things are different now.
 
If you are seriously considering the alternatives, I might advise you that to the best of my knowledge the food in the US forces - certainly in the US Navy - is better than you will find in the IDF, unless you limit your caloric intake to food which has been marked "kosher" by religious authorities.  Take your pick.

Gentile volunteers from foreign countries would probably be forbidden unless they
officially immigrated. After all depending on mercenaries is degrading(I think there is a difference between
dependancy on them and having a few around but others are more picky). A Diaspora would of course be eligible under the Law of Return and a number have availed. Aaron Wolf in A Purity of Arms describes a number of foreigners in his unit. If Israeli recruiters are like others, I really doubt that they ask questions diligently and if a kid looking for a reputation once to join a prestiegious army like the IDF he could, I suppose, temporarily change his name to Goldberg.

I've never met Otis Sistrunk. Who is he?
If he is an Israeli citizen between the age of 18-23 he has an obligation to serve his country. If he is an Arab or a religious fundementalist or possesor of a criminal record or medically unfit he will be granted an exemption. Of course, his social background may limit his security clearance so that we will only get a job behind the counter in the canteen.
